Why we test the way we do

"Trust me, it’s sharp" isn’t a great answer when you’re paying for a sharpening service, so we rely on two simple, visible tests that anyone can understand and verify for themselves at home afterward, no special equipment required.

The paper test: what it actually measures

Holding a sheet of printer paper by one edge and slicing into it tests whether the blade can start and complete a cut using only its own sharpness — no cutting board to brace against, no weight of the food to help. A sharp edge slices cleanly through with light pressure; a dull edge tears, snags, or needs the paper folded and braced to get through at all.

The tomato test: what it actually measures

A ripe tomato has a thin, slippery skin over soft flesh — an almost perfect stand-in for how a knife performs on real food rather than a lab material. A sharp edge breaks through the skin instantly under the blade’s own light weight and glides through cleanly. A dull edge dimples the skin, slides across the surface without biting in, or crushes the tomato before it finally tears through.

What a "pass" and a "fail" look like

On paper, a pass is a clean, straight cut with no ragged tearing along the line. On a tomato, a pass is an immediate bite into the skin with no visible dimpling beforehand, followed by a slice that falls away cleanly rather than getting squeezed out of shape.

The paper and tomato tests are simple by design — anyone can see and feel the result for themselves, no explanation required, and they’re part of every sharpening we do. For clients who want more than that, we also offer precision BESS sharpness testing on request. The BESS scale gives an exact numeric reading of how much force it takes to cut through a standardized test medium, so instead of just "it feels sharper," you get a specific before-sharpening number and a specific, much lower after-sharpening number.

BESS testing isn’t part of our basic sharpening service — it’s an optional add-on for anyone who wants documented, scientific proof of the improvement rather than the paper and tomato tests alone. Just ask if you’d like it included with your visit.
